Over Ice

Ingredients

50ml Dark Matter Spiced Rum

Method

Serve in a rocks glass over cubed ice.

Dark and Stormy

Ingredients  

50ml Dark Matter Spiced Rum  

25ml fresh lime juice 

Ginger beer 

Limes to garnish  

Method

Pour the rum and lime juice into a highball filled with cubed ice. 

Top up with ginger beer.  

Garnish with fresh lime quarters.

Cold Dark Brew

Ingredients

50ml Dark Matter Spiced Rum  

100ml cold brew coffee 

15ml demerara simple syrup 

15ml fresh lemon juice 

Lemon peel to garnish 

Method

Stir all ingredients in a cocktail glass with ice.  

Pour into an ice-filled highball glass.  

Garnish with a twist of lemon peel. 

Dark Matter Flip

Ingredients  

60ml Dark Matter Spiced Rum  

15-20ml orgeat  

15ml cream 

1 whole egg 

Method  

Shake all ingredients with ice in a shaker.  

Strain into a cocktail glass.  

Garnish with grated allspice or nutmeg.

Mulled Matter

Ingredients

1 bottle red wine (lighter-style e.g. pinot noir/pinotage)  

250ml Dark Matter Spiced Rum  

50ml agave syrup  

Oranges - juice & peel

Fresh ginger slices 

Star anise 

Cinnamon sticks  

Method

Place all ingredients in a pot and bring up to heat then keep warm on low temp. 

Allow the mulled rum to sit for at least 1 hour before serving in heat-proof cups/glassware.
